In Les Solistes, renowned Michelin-starred chef Pierre Gagnaire has created a contemporary, relaxed fine-dining restaurant. Pierre is known for simple yet artfully prepared dishes with beautifully fresh ingredients, using his own modern approach to classic French cooking techniques, to offer a memorable and unique dining experience.
Located on the first floor of the hotel, Les Solistes will allow guests feel relaxed in stylish and contemporary surroundings including artistic floral displays - with artwork reflecting both the heritage of the city and the passions of Pierre.
In addition to his outstanding restaurants all over the world, Pierre Gagnaire's eponymous restaurant in Paris is still one of the most vaunted places to eat in the French capital, demonstrating the resilience of one of the food world's true greats. His culinary motto has always been ‘facing tomorrow, but respectful of yesterday’.
Never has this been more fitting than at Les Solistes at the Waldorf Astoria Berlin, where Pierre has created dining experiences that mirror Berlin’s zeitgeist persona and the unique essence of the world’s most iconic luxury hotels, Waldorf Astoria New York.
If one were to compare the cuisine of the Waldorf Astoria Berlin restaurant Les Solistes with a musical style, jazz would be the apposite choice - highly individual, often unconventional. Improvising on a bassline of classic cuisine with an original flair. The secret of Pierre Gagnaire’s cuisine at Les Solistes is a reinvention of French cuisine - traditional recipes will be artfully deconstructed and brought into a contemporary context. While completely recontextualised, with regional sourcing an equally important consideration.
Above all, though, the concept is to create a relaxed, warm ambiance for our guests to discover these sophisticated dishes. The generous combination and interaction of textures and flavours is a real treat for the senses, whether for lunch or dinner.
The finest wines, especially the wines of France and Germany, are at hand in the wine cellar of the restaurant Les Solistes, awaiting to be discovered by you. The wide range of around 450 bottles primarily reflects Pierre Gagnaire’s culinary concept of combining new French cuisine with regional specialties. Prominent wine makers and an aspiring young generation of wine growers alike demonstrate an exciting blend of traditional and avant garde techniques.
The wine list at Les Solistes is equally thrilling and exciting for the experienced connoisseur as for those discovering fine wine. The wine is there to be tasted and discussed, perhaps with our sommelier, who has chosen an enviable list of classic and lesser-known wines, which will take you on a voyage of discovery.
What inspires us is to present the uniqueness of each wine with passion, while you experience each wine at its natural best.
At Les Solistes, wine meets Berlin – ever changing, always in motion, constantly evolving.

Vedad Hadziabdic
To afford guests an unforgettable experience – that is the motivation of Vedad Hadziabdic. The journey of life brought him from his birthplace in Bosnia via a short sojourn in Germany, back to the former Yugoslavia. There he started studying to become an engineer, but he discovered the fascination of gastronomy and dedicated himself to it. He found his calling in the subimity of haute cuisine. No other studies, and no other job, awake his passion in that way.
After an appropriate education, Vedad Hadziabdic travelled from Michelin-star restaurant to Michelin-star restaurant, eager to rise to the challenge. Always driven by his desire not only to satisfy the guest, but to exceed their expectations, he now attends to Les Solistes by Pierre Gagnaire. With his expert knowledge as an experienced host, he is not only responsible for the well-being of the guests, but for the whole service as well as the wine concept.
